Tea Bread Tuesday: Country Applesauce Muffins

I can't quite make up my mind which job would be more fun to have:  Picking out nail polish names for OPI (I'm currently wearing "I'm Not Really a Waitress") or designing paper liners for cupcakes and muffins . . .  Aren't these paper liners fun?


For the muffins I decided to try out my sister-in-law, Barb's suggestion to lower the oven temperature a little bit and cook a little longer (although she was referring to cookie-baking).  It worked beautifully!  The muffins were so moist!  I've also been noticing lately that I'm not too crazy about the taste of cloves.  This recipe didn't call for cloves (unlike other spice cakes I've made recently) and I found the taste more subtle and much more to my liking . . .

Tea Bread Tuesday: Pumpkin Bread with Dates

Pumpkin bread baked in these cute pumpkin-like muffin tins . . . Unfortunately, I think I liked last week's Pumpkin-Banana Bread better.  There isn't a thing wrong with this bread, indeed, the dates almost melt in the dough, and make it a very moist bread, but the recipe calls for 1 teaspoon of cloves and I'm discovering that I don't care for this spice a whole lot.  I should have halved the quantity, for my taste . . .  My DH concurs. 

I took them to the office and they disappeared.  I don't think this is so much a testament to my skill as it is to the fact that so many people lack the time to do any baking nowadays . . .

Tea Bread Tuesday: Corn Muffins

I thought I'd kill two birds with one stone this week: Bake some muffins for Tea Bread Tuesday and find a new recipe for corn bread or muffins, since this constitutes one of the essential components of our Thanksgiving dinner, and . . . er . . . that's coming up soon! Yikes! The recipe came from Ina Garten, The Barefoot Contessa, and they were pretty good, but they were not the super moist wonders that I was expecting and my kids are corn muffin snobs. The search must go on . . .

Tea Bread Tuesday: Country Applesauce Muffins

Uh . . . nope. Didn't like this one. Too dry. Eh . . . I'm done with apple breads . . . Apple pie: yes . . . Apple turnovers: yes . . . Apple juice: yes . . . Apple bread: not so much . . .

Fortunately, Creepy and Spooky are back . . . and they have voracious apetites!

Tea Bread Tuesday: Hazelnut Muffins with Strawberry Jam

Simple and uncomplicated goodness . . . yum!

I didn't wait long enough to take the muffins out of the tins and some of the strawberry jam oozed out on the kitchen counter . . .

So I refilled some of the centers with a little more jam . . .

There was a lot of finger licking going on this time around . . . A tough job . . .

Tea Bread Tuesday: Almond-Poppy Seed Bread (or Muffins)

These miniature muffins were wonderful, wonderful! Lawrence Welk: Move over! (You have to be over 50 to get the reference). These were a hasty bake and I didn't measure carefully. It didn't matter. This was a very forgiving recipe!

I first poured the batter in a loaf pan, but it looked a little low and I was afraid it would turn out rather flat, so I dug out the mini-muffin pans and used them instead. Tea Bread Tuesday: Sour Cream-Maple Muffins

When the time comes to recap "A Year of Tea Breads" I will be very surprised if this recipe doesn't end up among my favorites.

The recipe called for baking in a loaf pan, but I decided to make these darling little muffins instead . . .
