Easter 2021

I've only had my first dose of the COVID-19 vaccine to date, so, for now, we continue to take precautions.  This means another Easter at home, just the two of us.


But Spring brings promises of better days ahead, so I put my energy in preparing a nice dinner for my husband and myself.


But first, the table.  I pulled out old favorites that really never get old for me:  The willow chargers, Wedgwood Nantucket Basket dinner plates, Blue Calico salad plates, and willow napkin rings to match the chargers.


We still needed some Easter candy around, even though the boys aren't here anymore, so candy-coated chocolate egg truffles were scattered on the table. 
 

The sugar-coated gummy bunnies were placed in a little bowl to contain the sugar dust.  My husband is a little boy when it comes to candy, he devours it if it's left lying around, so I had to hide it until this morning.


We had a Honey Baked® Ham, which just needed to be heated, and it was delicious!  My motto is to keep holidays as easy as possible so we can enjoy the day.


Of course, my own rule went out the window when I made this Asparagus Cheese Tart.  I have come to the conclusion that, although I've done a little baking in the past, this is the part of cooking that I like the least.  Dough is still a mystery to me.  I bought commercial puff pastry, and cut it down so that it fit in my porcelain platter.  Then, I made the filling and baked it in the same oven-proof platter. I used Martha Stewart's Asparagus Gruyère recipe.  It was good, but way more labor intensive than I expected, and my husband didn't really care for the cheesy texture, so I don't think I'll be making this one again.  It looked pretty, though. 


I had never made Garlic Maple Roasted Carrots, but they were so delicious that I know it's something that will show up on our dinner table again and again going forward.  I liked leaving the bit of stalk on top, they looked cute.

And a sweet butter lamb rounded out the dinner.


The lamb-shaped butter from Danish Maid has become a fixture at all our Easter meals.  They are so sweet-looking, and the butter is delicious!


The dessert was a cheesecake from Costco, which was truly delicious:  Creamy, smooth, and not overly sweet.  To make it even more wonderful, I paired it with some homemade strawberry coulis, and fresh blueberries.  It was divine!  I don't think I'll ever make a cheesecake again as long as I live near a Costco.


And, when dinner was done, we were left with the crowning glory of Spring, this wonderful daffodil bouquet.  Happy Easter to all!

Easter with Peter Rabbit

Once upon a time there were four little rabbits, and their names were Flopsy, Mopsy, Cotton-Tail . . .


. . . and Peter.


Peter Rabbit reminds me of everything that was wonderful about my children's childhood:  The innocence, the mischief, the simple pleasures.  Oh, Beatrix Potter!  How I've missed you!  


When I saw these salad plates, I instantly new they were coming home with me.  I didn't even care if my husband, who had come along, was silently judging me.  I love all the charming details on these plates.  The insects put me right over the edge, especially the bee.  I love little bees.  If next year they come out with Jemima Puddle-Duck or Benjamin Bunny plates, I'm going to be in trouble again!


Since the setting of the Peter Rabbit story takes place in the countryside, I pulled out my Wedgwood Nantucket dinner plates and coffee cups with the lovely basketweave pattern.  They are quickly becoming my favorite dishes. 


Of course, willow chargers and napkin rings seemed to fit right in as well . . .


Here's the bird's eye view of the table.  The table cover picks up the color of Peter's jacket, and the gingham pattern provides another sweet country touch.  Does the table feel a bit French to you?  Whenever I take one of those "What's Your Style" quizzes, I'm usually identified as Cape Cod, Country French and Traditional.  That sounds pretty accurate, actually.


I found the flowers at my local grocer, in the perfect colors to match the Peter Rabbit plates.  In fact, I took the plate with me when I went shopping for the flowers.  See those tiny daisies?  I just learned that they are called Fleabane Daisies.  Before they bloom, the petals are closed so tightly that one might suppose they are giant fleas, but then, when they open up you have a plethora of cuteness!


I set up a Bread and Butter Station on the kitchen counter.  Would you prefer a slice of the French Cheese Brioche Braid, or a Hot Cross Bun?  Or a jelly bean? 


You can't have Easter at our house without jelly beans!


The menu was very simple:  A traditional Spanish Omelette with Onions and Potatoes, by popular request. I added fresh berries and coffee; for dessert, my mom's Vanilla Pudding, which I forgot to photograph.  I hate when I do that!


It was a quiet day for us, as it was for most of the country, staying at home in order to keep ourselves and our neighbors healthy.  My most fervent prayer this Easter is that we get past this tragic chapter in our country's history, the overwhelming challenge of the COVID-19 pandemic.  Be safe, dear ones!

Easter Dinner with the bunnies

With my son, David, leaving to go into the Army in two weeks time, my head is too full of worry to leave room for a great deal of creativity.

Still, it was Easter, and we were together!  Two great things for which to be grateful!  So with this little pep talk to myself I went to the basement and started pulling things from the boxes.  There's Peter Rabbit!  Did I ever finish reading all the Beatrix Potter stories to David?


No wait, that's not Peter Rabbit.  And that egg belongs to John!


What am I doing?  They are too old for bunny ears, aren't they? 
 
 
What if they were a manly brown . . . ?
 
 
Perhaps if I used some tactical diversion . . . like carrot cupcakes . . .

 
 Topped with violas from the garden, which are completely edible . . .


And some lemon parfaits . . .

 
With lots of jelly beans tucked among the flowers . . .  They may be men now, but they still love sweets!

 
Brown eggs and woven mats evoke a garden setting anybunny would enjoy . . .

 
And an easy guy-pleasing menu of Baked Honey Ham, Rosemary Potatoes and Green Beans - An easy-peasy meal that left us plenty of time for playing board games! 

I hope the kids remember this dinner.  I hope they remember the bunny ears . . . I hope they remember how much we laughed.  May the Risen Christ bless us and watch over us all!  Alleluia!

Happy Easter!

My children's schedules continue to be as crazy and unpredictable as ever, so this year we celebrated Easter with an early morning breakfast.  The table was set the night before . . .


First thing first:  My husband/sous chef checking e-mails before heading to the kitchen to prepare breakfast . . .

Beautiful tulips . . . Spring is here!!!!!


Then the Easter bunny did his thing and filled the table with candy!


He even brought chocolate umbrellas and hung them from the flower vase . . .


Here are our two “little” boys, who never seem to grow too old for candy . . .


And now, Mama can sit down and have a cup of coffee . . .


And before long, my oldest goes back to college with a batch of cupcakes for his buddies . . .

This and That

The Easter lily has finally succumbed, but it brought us so much joy!


This year's plant was loaded with buds . . .


It bloomed and bloomed and bloomed . . .


Seventeen blooms!


We went to NIU to see our son and his work at an installation art exhibit.  The subject of his work was color and how humans make judgments based on cultural connections to color.  I told him that this picture of him reminded me a little of Che Guevara.  He said:  “Who's that?”  Goodness, I'm getting old!


We finished painting our bedroom!  The room went from Havana Cream yellow to Mountain Air blue . . . and we now have a lovely, smooth ceiling . . . the popcorn is gone!


The bedroom has a tall ceiling and it would be perfect for a beautiful chandelier, but then I'd have to give up the ceiling fan . . . I like having a ceiling fan, it really helps to circulate the air. It's nice when both form and function can be combined, but, for me, function has to come first . . .  We have wall controls for the fan, but I couldn't resist these swirly fan pulls.  It's like jewelry for the ceiling!


Today, for the first time, I pulled out the beautiful quilt my sons gave me for Mother's Day last year.  It has a muted palette that makes the room feel so restful!


Here's a shot of the little corner I call mine.  It has all the essentials:  Good reading light, my iPod, the Kindle, lots of pillows, an old, faded, comfortable chair . . . However, it's lacking . . . je ne sais quoi . . . style?


Once when I was a teenager, I became ill while visiting a friend of my mother's.  She took me into her bedroom to lie down and forever changed how I felt about bedrooms.  Her bed was soft and the scent of lilacs perfumed the air.  Her sheets were impeccably white and crisp.  The decorations were sparse, but she had just enough touches in the room to make it a pretty and very personal space.  I fell asleep and when I woke up, I felt better.  I've never forgotten that wonderful room. 

In recent years, we've gotten sidetracked with other projects, but seeing the freshly painted room and the lovely quilt has reminded me of how important it is to have a welcoming haven in which to read, pray, meditate and relax.  Now I'd like to try and recreate the feelings evoked by that calm and inviting room of long ago, and I hope you'll come along for the journey . . . stay tuned!
