Quinoa Recipe from AARP

It's a telling sign of my age that I actually find myself browsing through the AARP magazine.  This recipe came from an article in the August/September 2013 issue about former President Bill Clinton's new vegan diet.  I've been experimenting with quinoa lately as part of my on-going search for foods with a lower glycemic index, so I gave it a try . . . It.  Was.  Fantastic!!!  You MUST try this!  My husband gave it his very persnickety stamp of approval.  What else could you possibly need to know?


SPICED AND HERBED QUINOA WITH GREEN ONIONS
This recipe is adapted from Rhys Rosenblum, executive chef, Restaurant Associates.
Serves 4

1 cup quinoa
2 cups vegetable stock or water (I used chicken stock)
½ cup hothouse cucumber, diced
½ cup tomato, diced
2 tablespoons, red onion, diced
2 green onions, thinly sliced
2 tablespoons chopped cilantro
1 teaspoon chopped jalapeño
3 tablespoons extra-virgin olive oil
1 tablespoon fresh lemon juice

1.  Cook the quinoa according to package directions, using stock or water.  Let cool completely.

2.  In a large bowl, combine the quinoa with the remaining ingredients.  Toss to mix thoroughly.  Serve chilled.

Nutrients per serving:  268 calories, 6g protein, 34g carbohydrates, 3g fiber, 13g fat (2g saturated fat). 0mg cholesterol, 483mg sodium.

I love quinoa, I eat it instead of rice, so not to gain weight. You look lovely in your new photo too! I will try your récipe, my friend. Thank you for your kind and sweet visit. (My daughter's HOLA is the Ecuadorian version, as now some Latin countries have their own as well) I do buy Hola the Spanish version to know about the Royals, lol.. Myabe you should get the subscription directly from Spain, as I get some American magazines..on the mail! Big hugs,

I've never had quinoa! I've read about it a lot lately, and I do need to try it. This looks like a good recipe to start with. Thank you for sharing it. laurie

I had to google quinoa - such a sheltered life I've lived. This looks good and I'm game for getting good, healthy recipes from wherever and AARP is as good as anywhere.

Ha! I'm into quinoa big time--love,love, love it! Because my husband's reaction would be very similar to your husband's, I eat it out. If you have a First Watch near you, you MUST try their quinoa dish--with chicken, lemon, and a wonderful dressing. I bought the tri-color at Whole Foods, but...refer to sentence number two...:)

It's such a good food for us--good for you for trying it!

Hi Maria, I have never eaten quinoa, although there is a package of it in my pantry because my two 20-something, health conscious kids love it. I will try it on your recommendation, leaving out the onions as I am so allergic and any health benefits of the grain will be instantly negated! Thanks for the idea! We need another post from you!
