Tea Bread Tuesday: Lime Bread

What else? I still need to use up all those limes!


The recipe was quite simple:

For the bread:

6 tablespoons unsalted butter, softened
1 cup sugar
the grated zest of 2 large limes (1½ teaspoons)
the juice of 1 lime
2 eggs
1½ cups flour
1½ teaspoons baking powder
¼ teaspoon salt
2/3 cup Half and Half
2/3 cup chopped walnuts

For the glaze (optional, I did not make it):

2/3 cup confectioners sugar
1 to 2 tablespoons lime juice

Pre-heat oven to 350°F. Spray a 9 x 5 loaf pan with non-stick cooking spray.

Cream the butter and sugar. Add lime juice, grated lime zest and eggs; beat well. Combine dry ingredients. Add to butter mixture alternating with the Half and Half until it's all incorporated into the batter. Fold in the nuts. Pour into the pan and bake for 45-55 minutes or until a toothpick inserted in the center comes out clean. Cool in pan for about five minutes, invert and place in serving platter.

Make glaze by combining the confectioner's sugar and enough lime juice to desired consistency. Drizzle over warm bread. Cool completely.

This bread was absolutely delicious. I chose not to make the glaze because I wanted to keep it light and not too sweet. I loved it. I think next time, though, I will try it with the glaze just so I can have a second viewpoint.

I sat in the backyard with my cup of coffee and a slice of bread . . . and savored a perfect summer day . . .

Mmmmm all these food posts. I can't imagine lime bread, but you gotta do, what you gotta do. Can't go wasting all that fresh fruity goodness!

I have honestly never had lime bread, or even heard of lime bread - but now I have the urge for ...lime bread. Another must try. (get some macro shots of those limes before they go away) :)

Maria, this sounds fantastic! I think I'm going to be picking up some limes on my way home! And maybe try it with pecans, in muffin tins. . . It looks delicious!

Bonnie had her challenging moments, but she was a wonderful little family member :( We're going to greatly miss her, and I appreciate that you know what she meant to us.

Hi Maria, I'm not sure how I got here--just kept clicking through other posts--but I am glad I found you! I am now your newest follower. This lime bread looks delicious and I happen to have cream and limes in my kitchen, so I think I will try it! I scrolled back to see why you have so many limes and had to laugh--of course you need to buy them at that price, and they look so good in a bowl! My mother squeezes the juice out of her lemons and limes and freezes them in ice cube trays, then takes out just what she needs. Maybe this will help you! Come see me when you have time! Linda
